Kale Salad with Spicy Peanut Dressing

1 bunch of organic kale, stemmed and blanched for 2 minutes*, and roughly chopped
1 medium sized red onion, caramelized
1/4 cup peanuts, roughly chopped

*To blanch the kale, bring a pot of water to a boil. Place the kale in it for 2 minutes, then remove with tongs and place the kale immediately into a bowl of cold water with ice cubes to stop the cooking. Drain the water and set aside.

For the dressing:

1/2 cup unsalted smooth peanut butter, preferably homemade
2 tbsp tamari (gluten free soy sauce) or coconut aminos
2 tbsp rice vinegar
1 1/2 tbsp honey
1 clove garlic, minced
1 tsp fresh ginger, minced
A pinch of sea salt
1/4 tsp red pepper flakes
1/4 cup of hot water (plus more if the dressing is too thick)

1. Place all dressing ingredients in a blender and blend until smooth.

2. Place kale, peanuts and onions in a bowl, and drizzle with dressing. Toss and serve!
