Peanut Butter Macadamia Nut Cashew Chocolate Chip Cookies – V/GF

1 cup brown sugar
3/4 cup oat flour
1/4 cup sweet sorghum flour
1/4 flax seed meal
1 tsp baking soda
1/2 tsp sea salt
1 tsp xanthan gum
1 cup organic, unsalted peanut butter
1/4 cup coconut oil, melted
2 tsp vanilla
1 1/2 tbsp macadamia nuts, chopped
1/4 cup cashews, chopped
1/4 cup cacao butter, chopped
1/4 cup chocolate chips

Preheat oven to 350F.

1. Mix together dry ingredients. Then add the wet ones. Mix until combined. Then add in the nuts, cacao butter and chocolate chips. Stir until combined.

2. Line 2 baking sheets with parchment paper. Scoop out tablespoon sized balls of cookie dough and place on the baking sheets, 1 1/2 inches apart. Push them down with a fork in either direction (like the standard peanut butter cookie pattern).

3. Bake for 7 minutes, turn, and baked another 5 minutes or until golden brown. Cool and enjoy!
