Healthy “Refried” Black Beans

1 tsp EVOO
1 yellow onion, small diced
3 cloves garlic, minced
1 tbsp chili powder
3/4 tsp ground cumin
2 cans black beans
1 1/2 cup vegetable broth
Juice of 1 lime
1 tsp sea salt
1/2 tsp black pepper

1. Saute the onions in EVOO on medium heat for about 5 minutes, or until translucent. Then add the garlic and toss around for about 30 seconds or until you begin to smell the garlic. Then add in your spices (except for the salt and pepper), beans and broth.

2. Bring it to a simmer, and as it’s simmering, using a potato masher, squish the beans down as if you were making mashed potatoes. It’s not going to be smooth, but most of the beans should be smushed when you’re done.

3. Take the beans off the heat and add in the lime juice, salt and pepper. Stir. Taste and adjust seasonings if need be.
