Almond Milk Peppermint Hot Chocolate

2 cups unsweetened almond milk
1 tbsp unsweetened cocoa powder
1-3 tsp honey (to taste)
2-4 drops peppermint flavor or oil (I used Saje Natural Wellness peppermint oil)

1. Heat up your almond milk in a sauce pan over medium to medium/high heat. Add in a tablespoon of cocoa powder. If this doesn’t seem like enough for you, add another teaspoon. Stir to combine using a whisk to get the lumps out.

2. Add a teaspoon of honey. Stir. Taste. If it’s not sweet enough for you, keep adding honey (or agave or maple syrup) until you are happy with the level of sweetness.

** At this point, depending on the strength of your element, the milk might start to boil over (like mine did – oops). If this happens, immediately remove from the heat, and continue adding your ingredients off the heat.**

3. Remove the almond milk hot chocolate from the stove (if you haven’t already) and add 2 drops of peppermint. Stir and taste. If it’s not strong enough, continue adding a drop at a time and stirring and tasting until you get just a hint of peppermint on your tongue at the ends of a chocolaty sip of hot chocolate.

Serve in your favorite holiday mug! If you want to get fancy, top it with some coconut whipped cream (recipe here) and/or a candy cane!!
