Spicy Kale & Cauliflower Paleo Rice

1 bunch of curly green kale, washed, de-spined, and chopped
1 large head of cauliflower, washed and chopped
2-3 tbsp sesame oil
2-3 tbsp EVOO
3 cloves garlic, minced
1 handful cilantro, roughly chopped
1 large tomato, chopped small dice
4 tbsp Apple Cider Vinegar
2 tbsp coconut aminos
1 tsp sea salt
1/2 tsp black pepper
5 scallions, thinly sliced
2 tbsp siracha

1. Using a food processor, make your cauliflower rice. I find that I have to do this in batches, because if you put too much cauliflower in at one time, not all of it gets “riced.” Set aside.

2. Using a food process, make your kale rice. Do this is batches as well. Set aside.

3. Heat up your oil over medium low heat, and add the cauliflower and kale rice, along with all of the rest of the ingredients to the pot. Stir to combine. Turn the heat up to medium high, and saute for about 10-15 minutes, stirring every 3-5 minutes to make sure it doesn’t burn.

Serve alone, or with some guacamole and/or sweet potato fries.
