Honey Dijon Vinaigrette

I won’t lie to you, sometimes I just don’t feel like cooking. There – I said it! Gasp!

But just because I don’t feel like cooking doesn’t mean my diet has to suffer! On these nights, I turn to a big hearty salad:

Mesclun mix. Dried cranberries. Walnuts. Chickpeas. Quinoa. Cherry tomatoes. Avocado.

Toss it all together with this honey dijon vinaigrette that takes 60 seconds to make, and you’ve got the makings of something wonderful.

Here is what you will need:

1 tablespoon dijon mustard
1 tablespoon honey
3 tablespoons balsamic (can substitute red wine vinegar if you want to change it up)
6 tablespoons olive oil (you can add up to 8 tablespoons if you want to)
Lots of pepper (about 1/2 teaspoon)
A pinch of sea salt (about 1/8 teaspoon)

1. Put all the ingredients in a jar with a lid and shake it up, making sure everything is incorporated. Be careful: the honey likes to stick to the bottom of the jar, so shake vigorously. Put your back into it!

2. Pour over any salad of your choice, toss, and enjoy!
