Cashew Ricotta
One of my all time favorite restaurants is Cafe Gratitude. Apart from having such a tranquil and beautiful atmosphere, they also have amazing vegan food - good enough to please even the most staunch carnivore (says me). I got their cookbook as a Christmas gift, and already have a new favorite: cashew ricotta cheese. I used it to build in incredible Alfredo, butternut squash lasagna/casserole over the holidays, which I will show you how to do in a few videos. For now, start with this ricotta, because you're going to need it :)
