GI Friendly Sweet Potatoes in Coconut Milk
As a vegetarian who is mostly vegan, I tend to eat a lot of complex foods. Lots of sauces made with nuts, and a big variety of vegetables, legumes and some grains. Unfortunately, I've had GI trouble my entire life (and they started long before I became a vegetarian ten years ago), and sometimes, my stomach just needs something soothing and simple. This recipe for GI friendly sweet potatoes in coconut milk really does the trick, and is so tasty and SO SO easy to make!
