Pumpkin Pie Chia Seed Pudding

I’m on a vegan kick these days. Actually, more like a vegan cleanse, but also cutting out alcohol, sugar, gluten, and anything processed and taxing on my digestive system.

But that doesn’t mean I don’t want a little dessert! So I concocted this pumpkin pie chia seed pudding that is free of dairy, gluten, soy, and even refined sugar! It’s sweetened with dates and a touch of maple syrup! A guilt free dessert, just for you!

Here is what you will need:

1 cup pumpkin puree
2 tbsp chia seeds soaked in 4 tbsp water for 10 minutes, until gelatinous
1/2 cup coconut cream
1 cup unsweetened almond milk
1/3 cup pitted dates
A pinch of kosher salt
1 tbsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp nutmeg
1/8 tsp ground cloves
1 tbsp maple syrup
1tsp vanilla

Blend all the ingredients together in a food processor or blender, chill, and enjoy!

Keep in the fridge for 3-5 days.
