Cauliflower Macadamia Nut Nori Rolls

1 – 1/2 cups cauliflower, chopped
1 handful cilantro (optional)
1 handful spinach or power greens
1/4 – 1/2 cup raw or roasted macadamia nuts, salted or unsalted
1 tsp Celtic sea salt (less if you used salted nuts)
1 tbsp coconut aminos, plus more for serving
1 avocado, cut into strips
1 package nori sheets

You will need a sushi rolling mat to make these rolls! Don’t be intimidated! You can get one here.

1. Place all ingredients in a food processor and pulse until you make “rice.”

2. Place a nori sheet on the sushi mat. Scoop out about 1/2 a cup of the rice mixture and create a tube with the mixture along the sushi mat (see video). Be sure to leave 1/2 an inch on either side and 1 inch along the bottom.

3. Place two strips of avocado lengthwise on top of the “rice.”

4. Roll your roll with your mat (see video). Seal it with water for your final roll (see video).

5. Continue rolling your rolls until all the “rice” is used up. Serve with coconut aminos or soy sauce. Enjoy!
