Coconut Garlic Aioli

1 can full fat coconut milk
2 tbsp chia seeds
1 tbsp raw honey
1 tbsp dijon mustard
2 cloves garlic, minced
Juice of 1/2 a lemon
1 tsp sea salt

1. Place all ingredients in a blender and blend until smooth. Store in a jar in the fridge to set for at least four hours. If you find it’s still too liquidy, add another teaspoon of chia seeds and let it set another few hours. Enjoy!
