Garlicky Roasted Potatoes

1 1/2 pounds organic fingerling potatoes (I used tri-colored), quartered
2 cloves garlic, minced
1-2 tbsp EVOO (extra virgin olive oil)
1/2 tsp sea salt
1/4 tsp black pepper

Preheat oven to 400F.

1. Place your quartered potatoes on a parchment or silicone baking mat lined baking sheet. Drizzle with EVOO, sea salt and pepper. Toss to combine. Spread out in an even layer, flesh side down.

2. Bake for 20 minutes or until tender.

3. Once they are tender, remove them from the oven and carefully add your garlic to the pan. Toss to combine, and spread the potatoes out in an even layer again. Bake for another 3-5 minutes, just to warm the garlic through (but not burn it).

Serve warm and enjoy!
