My Italian Grandmother’s Marinara Sauce!

2-3 tbsp EVOO
1 medium onion, small dice
5 cloves garlic, minced
2 28oz cans of diced tomatoes
1 or 2 15oz cans of tomato sauce (if you only have one on hand, that will do)
1/3 cup tomato paste 1 cup veggie stock
1 tsp dried oregano
2 tsp sea salt
1 tsp black pepper
1 apple, quartered

1. Heat oil over medium low heat. Add onion and saute until translucent, about 10 minutes. Add in the garlic and saute another 30-60 seconds.

2. Add tomatoes, tomato sauce, spices, stock, tomato paste and apple. Simmer the sauce on low heat for at least an hour (and all day if you have the time to spare!).

3. Serve over your favorite pasta, use in an eggplant parmesan, or just eat it with a wooden spoon 🙂
