Puttanesca Sauce

4 tbsp EVOO
1 medium sized onion, chopped medium dice
4 cloves garlic, minced
4 medium sized tomatoes, chopped medium dice
1 cup fresh basil, roughly chopped
12 Kalamata olives, roughly chopped
1/2 tsp dried oregano
1/8 tsp red pepper flakes
1/2 tsp sea salt
1/2 tsp ground black pepper
2 cups of fresh spinach1. Heat up your EVOO in a skillet over medium heat. Add your onions and let them caramelize and brown for about 20 minutes.

2. Add in the garlic. Toss and let it saute for about 30 seconds, just until you can smell the garlic. Then add in your spices, chopped tomatoes, and olives. Toss to combine and let the tomatoes cook down for about 20 minutes.

3. Once the tomatoes are cooked down, add in your spinach. Toss until wilted down.

4. Turn off the heat and add in your fresh basil. Toss to combine, adjust the seasoning, and serve over your favorite pasta, spaghetti squash, quinoa, or whatever your heart desires!
