Ginger Mint Iced Tea

1 handful of fresh mint leaves, washed
3 Traditional Medicinals Ginger Organic tea bags
3 L of water, boiled

1. Boil your first round of water (my tea kettle can only handle 1.5L at a time). Place the mint leaves in a glass or ceramic jug, and poor the water over them.

2. Once the second round of water has boiled, pour it into the jug, and let the 3 ginger tea bags steep for about 20-30 minutes.

3. Remove the bags, then place the tea in the fridge to cool overnight.

Voila – now you have iced tea!

Note: if you’re serving the ice tea within 48 hours, you can leave the mint leaves in there. If not, take the leaves out or else they start to taste funky! But the tea will keep in the fridge for at least a week.
