Spirulina Pesto – Vegan Friendly!

When I went to this restaurant, Rootz Cafe, in Steamboat Springs, CO, I fell in love with their spirulina pesto! The chef was gracious enough to give me the recipe! I’ve made a few tweaks, but here it is:

1 handful fresh basil
1 handful fresh cilantro
1/4 cup pine nuts
4 tbsp fresh lemon juice
10 cloves garlic, peeled and roughly chopped
1 tsp sea salt
1/2 tsp ground black pepper
1 1/2 tsp spirulina powder
1/2 cup EVOO

1. Pulse the nuts and garlic in a food processor into a paste.

2. Add the cilantro, basil, spirulina, salt, pepper and lemon juice. Turn on the food processor, and as it’s running, pour the EVOO into it. Add more if the pesto is too thick.

Serve this over pasta, spaghetti squash, on pizza, or anything else where you might use pesto!
