2-3 dates, pitted
1 3/4 cup coconut milk, full fat
1/4 cup almond milk (or other nut milk)
2 tbsp cocoa powder
1 tsp vanilla
1/4 cup cashews (optional)
1/2 tsp sea salt
1 tsp cinnamon
1 1/2 tbsp real maple syrup
1/2 cup black chia seeds
1. Place everything in a blender except for the chia seeds. Blend until smooth (about 1-2 minutes).
2. Add the chia seeds in and blend for another 30 seconds, or until smooth.
3. Pour the pudding into a dish or into individual containers, and let set in the fridge for 1-2 hours. Serve plain, or with sliced bananas, slivered almonds, vegan chocolate chips – or whatever your heart desires!
