Vegan Chipotle Mayo

1 cup full fat coconut milk
1/4 cup EVOO
The juice of half a lemon
1 tbsp chia seeds
1/3 cup siracha (or your favorite hot sauce)
1/2 tsp garlic powder
A pinch of sea salt

1. Blend all ingredients together in a blender for a minute, or until smooth.

2. Pour into a mason jar, cover with lid, and let it sit and set in the fridge for at least an hour or overnight. It was gelatinize overnight and be the consistency of mayo in no time!
