Salted Dark Chocolate Almond Goji Berry Bark

2 3.5 oz 85% dark chocolate bars (I prefer Green & Black’s Organics), plus 2 more small pieces
1 handful of goji berries
1 handful of whole roasted raw almonds
A pinch of celtic sea salt

1. If you’re almonds haven’t already been roasted, roast your almonds at 350F for 5 minutes. Set aside to cool.

2. Break up your 2 chocolate bars into a double boiler (to make a double boiler, heat up about an inch of water in a pot. When it comes to a boil, turn off the heat and place a metal bowl over top of the pot so that it rests there). Stir until the chocolate is completely melted. Remove from the heat.

3. In order to temper the chocolate, add your 2 extra pieces of dark chocolate to the bowl of melted chocolate and stir until melted.

4. Poor the chocolate onto a parchment or silicone mat covered sheet pan. Using a spatula, spread the chocolate into somewhat of a rectangular shape, ensuring the chocolate is about 1/8-1/4 inch thick.

5. Sprinkle with as many goji berries and almonds as your heart desires! Then finish it off with a pinch of celtic (or himalayan pink) sea salt.

6. Let it set in the fridge. Once it’s completely set (cooled), break it into bite sized pieces. Store in the fridge for up to two weeks.
