Peanut Butter Macadamia Nut Cashew Chocolate Chip Cookies – V/GF
My friend, Diana, told me about these cookies she absolutely LOVED in Boston. They were peanut butter white chocolate cashew cookies. She got me the recipe, and asked if I could make them vegan and gluten free. Never one to shy away from a challenge (especially where food is concerned), I came up with this creation! I added in Macadamia nuts to replace the white chocolate, but I also used cacao butter pieces to do the same! And I added chocolate chips, because, well, I love them.
