When I started experimenting with a vegan diet, I was skeptical. My mother is Italian, and my father is Irish and English. So it stands that I grew up eating lots of sausage, meat balls, meat sauce, chicken Parmesan, steak and lots and lots of cheese.
But none of that ever settled well in my stomach, so I had to start looking for alternatives to satiate me.
I found this recipe for raw vegan walnut meat tacos with cashew sour cream on a blog called Roost and I fell in love. It’s been a staple in my house ever since. Easy and quick, you won’t believe the flavor – and the fullness factor after you’re done!
These will be perfect for your next Taco Tuesday!
Here is what you will need:
For the Walnut Meat:
3 cups walnuts
1 1/2 tablespoons cumin
1 teaspoon ground chili powder
2 1/2 tablespoons soy sauce (use Tamari if you have a gluten allergy)
1. Blend everything together in a food processor until the walnuts are ground to pea size. This should only take about 5-8 seconds. DO NOT OVER MIX! Otherwise you will end up with mush instead of walnut meat!
For the Cashew Sour Cream:
1 cup raw cashews
1/4 teaspoons salt
4 tablespoons fresh lemon juice
1/4 cup water
1. Blend everything in a food processor until smooth.
Other ingredients needed to assemble your taco:
Corn or wheat tortillas
(Iceberg lettuce or cabbage if you prefer to use them as your tortilla)
Salsa and/or diced tomatoes
Guacamole (preferably homemade)
Sauteed mushrooms or any other veggie you would like
All you need to do from here is assemble your taco with all of your toppings, and of course, enjoy your dinner!

Howdy! This is kind of off topic but I need some help from an established blog. Is it difficult to set up your own blog? I'm not very techincal but I can figure things out pretty quick.
