1/2 cup Vegan Chocolate Shakeology protein powder (or your own chocolate protein powder)
1/2 cup GF oats
1/2 chopped pecans
1/2 cup almond butter (homemade is best but you can use store bought)
1 tbsp coconut oil, melted
1-3 tsp water, depending on how dry the dough is (see video)
1. Combine the dry ingredients in a bowl and stir. Add the wet ingredients, starting with one teaspoon of water. Use a fork to mix it around, and then using your hands when the fork doesn’t cut it anymore! If the dough is still too dry to form a ball, keep adding 1/2 a teaspoon of water at a time and mixing until you get a consistency like cookie dough.
2. Once you reach the right consistency (this could take anywhere from 1-3 or even more teaspoons of water), take a tablespoon measurement and roll out your balls!
3. Store in an airtight container in the fridge for up to one week.
