Whether you’re Canadian and Thanksgiving is behind you, or American and Thanksgiving is ahead of you, everyone always needs a good pie recipe! They can line holiday tables, and liven up a summer party – you know they can!
As someone who eats mostly plant-based and gluten free, I still have a sweet tooth! And I still like me some pie.
Thankfully, no deprivation is required!
But you can’t have pie without a good, solid pie crust, now can you?
Check out this recipe for a vegan, gluten free pie crust you can use to make any pie your heart desires!
Here is what you are going to need:
1 cup brown rice flour
1/2 cup sweet sorghum flour
1/4 tsp sea salt
1/2 cup + 3 tbsp coconut oil, melted
3 tbsp maple syrup (the real stuff, not corn syrup)
1-2 tbsp cold water
1. Place all the ingredients in a bowl of a stand up mixer fitted with a paddle attachment. If you don’t have one, you can just use a regular ol’ bowl and a fork.
2. Mix until combined.
3. Clear a big space on your counter, and dust it with brown rice flour. Dump your dough onto the dusted surface, and knead it a few times. Then form it into a ball.
4. You now have pie dough! You can use it right away, as directed by your pie recipe, or you can freeze it for later use!
