Sweet Potato Pizza Crust – Gluten Free & Vegan


2 3/4 cups to 3 cups cooked sweet potato (yams)
1/2 tbsp chia seeds
1 1/2 tbsp water
1/4 cup coconut flour
1/4 cup sweet sorghum flour
1/4 cup almond meal
1 tsp apple cider vinegar
1 tsp EVOO
1 tsp sea salt
1 tsp garlic powder
1 tsp oregano
1/2 tsp ground black pepper

Preheat oven to 400F.

1. Place the chia seeds and water in a bowl and set aside for about 10 minutes or until they gelatinize. Cook your sweet potatoes how you’d like (roasting, frying, baking). Smash them down until smooth in a large bowl.

2. Add all of the rest of the ingredients – including the chia seed mixture – into the bowl with the sweet potatoes and toss to combine.

3. Line a baking sheet with a silicone baking mat or parchment paper. Spread out your dough onto the sheet evenly, about 1/4 inch thick.

4. Bake for 20-25 minutes or until the edges are golden brown.

5. Serve as is, or top with your favorite pizza toppings! I topped this one with pesto, caramelized onions, red pepper and sautéed mushrooms and put it back in the oven for about 5 minutes to heat it through.
