White Bean Hummus

The other night I had people coming over for dinner and I had nothing to serve, and no time.

Thankfully, I had a can of white beans in the pantry, because in barely any time, I had whipped up a batch of white bean hummus to distract everyone while I figured out what to make for dinner (thanks to my well stocked pantry, I was able to make curry).

It was a hit! And it only took about 60 seconds to make.

Here is what you will need:

1 15oz can cannelli beans (white beans), rinsed and drained
4 small garlic cloves, roughly chopped
2 tbsp fresh squeeze lemon juice
1/3 cup extra virgin olive oil (EVOO)
1 tsp sea salt
1/2 tsp black pepper

1. Place all ingredients in a food processor and blend until smooth (about 30-60 seconds).

2. Serve with chips, veggies, or whatever your heart desires!
