Collard Green Wraps

1 head of organic collard greens, washed
1 cup organic red cabbage, sliced
1 organic red pepper, sliced
1 organic cucumber, peeled and sliced
1/2 cup cashew sour cream
1/2 cup vegan pesto (homemade or store bought)
1/2 cup caramelized onions
1 handful organic fresh parsley
1 handful organic fresh basil1. Cut off half the stem of one of your collard green leaves. At the top of the leaf, place a tablespoon of pesto, a tablespoon of cashew sour cream, and a few strips of each of the vegetables and herbs.2. Flip up the bottoms of the collard green leaf and roll it like a burrito. Continue with the rest of your collard greens until you have all of your wraps made!

And remember: you can eat all the collard green wraps in the world, but if you’re not taking care of your body outside of the kitchen, nourishing it with activities that de-stress you and keep you happy, you will have a hard time fending off disease.

So resolve to nourish yourself both inside and outside of the kitchen this week! Take a walk, go out for dinner with friends, watch a funny movie, get a massage, or do whatever makes your heart smile. The collard greens will take care of the rest (:
